Als Assistant Director of Food & Beverage sind Sie fur die folgenden Aufgaben verantwortlich:

Uberwachung des taglichen Betriebes der F&B-Abteilung Unterstutzung des F&B-Direktors bei der laufenden Kontrolle und Analyse fur Folgendes:

+ Gastezufriedenheit
+ Vermarktung
+ Einnahmen und Betriebskosten
+ Sauberkeit und Hygiene
+ Wochentliche Inspektionen von Kuchen und Restaurants mit Berichten
+ Erstellung und Kontrolle von Wein- und Getrankekarten
+ Tagliche Hotelbesichtigungen, um betriebliche Standards und Schwierigkeiten zu beobachten, und deren Verfolgung mit den zustandigen Managern
+ Sicherstellung, dass die monatliche Vorratsanpassung aller Betriebsmittel in allen Verkaufsstellen aktualisiert wird
+ Vertretung des Director of Food & Beverage in dessen Abwesenheit
+ Von der Director of Food & Beverage zugewiesene Aufgaben und Sonderprojekte
+ Planung in Zusammenarbeit mit dem Director of Food & Beverage sowie Entwicklung der Menus gemass dem jahrlichen Marketingplan
Sicherstellung, dass alle festgelegten Aktionspunkte, tagliche Briefings oder zweimonatlichen Betriebstreffen von den betroffenen Personen befolgt werden Verantwortungen, unter Anleitung des Director of Food & Beverage, wie die Einstellung bestimmter Ebenen von Mitarbeitern, Mitarbeiterorientierung, Beurteilung der Arbeitsleistung, Coaching, um eine angemessene Personalausstattung und Produktivitat sicherzustellen Sicherstellen, dass Schulungen fur alle F&B-Mitarbeiter durchgefuhrt werden, um unsere Servicestandards aufrechtzuerhalten und zu verbessern und die H&S-Standards einzuhalten Arbeitsprognose Unterstutzung beim Strategieplan des Hotels, beim jahrlichen Marketingplan, beim Zielprogramm und bei der Budgetierung fur die F&B-Abteilung Aktualisierung des taglichen, wochentlichen und monatlichen F&B-Berichts Kundenkommentare und -beschwerden sowie deren Korrekturmassnahmen nach Rucksprache mit dem Director of Food & Beverage und dem betroffenen Abteilungsleiter vornehmen Einhaltung aller Gesetze, die den Betrieb betreffen, einschliesslich Genehmigungsvorschriften, Gesundheitsvorschriften sowie Brand- und Sicherheitsvorschriften Meldung von Unfallen an Kollegen, Gaste oder Besucher gemass den Hotelverfahren

Als Assistant Director of Food & Beverage erwarten wir von Ihnen:

Mehrjahrige Erfahrung in einer vergleichbaren Position in der Luxushotellerie. Hervorragende Kenntnisse aller Aspekte des F&B-Betriebs, einschliesslich Restaurant- und Barmanagement, Bankett, Room Service, Kulinarik und Stewarding Sehr gute rechnerische Fahigkeiten und in der Lage sein, umfassend mit Tabellenkalkulationen und Budgetierungspaketen zu arbeiten Erfahrung in der Entwicklung strategischer Geschafts- und/oder Lebensmittel- und Getrankeplane Erfahrung in Benchmarking-Aktivitaten Erfahrung in der Erstellung von Budgets fur Lebensmittel und Getranke, Analyse von Gewinn- und Verlustrechnungen und Prognosen und in der Verwaltung von Werbeaktionen fur Lebensmittel und Getranke Hervorragende Fahigkeit zur vorausschauenden Planung und Entscheidungsfindung Erfahrung im Leistungsmanagement und im Umgang mit einem multikulturellen Umfeld und menschenorientiert Gute Kenntnisse von Microsoft Office, einschliesslich Word, Excel, PowerPoint Organisiert mit hoher Integritat und Professionalitat, zuverlassig, hoflich und mit einer guten Prasentation Exzellente Kommunikationsfahigkeiten in Wort und Schrift in Deutsch und Englisch

About the job

As Assistant Director of Food & Beverage at Mandarin Oriental Palace, Luzern, you will assist in managing all F&B operations, ensuring high-quality service, optimizing financial performance, and leading the team to deliver exceptional dining experiences. You will work closely with department heads to uphold the brand's standards and contribute to strategic planning.

As Assistant Director of Food & Beverage, you will be responsible for the following duties:

Supervising the day-to-day operation of the F&B Department Assisting the F&B Director in controlling and analysing on an on-going basis for the following:

+ Guest Satisfaction
+ Merchandising and marketing
+ Revenues and Operating Costs
+ Sanitation, cleanliness and hygiene
+ Conduct weekly inspections of kitchens and restaurants with minuted follow-ups
+ Prepare and control wine and beverage lists
+ Conduct daily hotel tours to observe operational standards and difficulties and follow them up with the relevant Managers
+ Ensure the monthly parstock adjustment of all operating equipment is updated in all outlets
+ Assume the responsibilities of F&B Director in his absence
+ Perform related duties and special projects as assigned by the director of F&B
+ Plan in conjunction to the F&B Director and outlets Managers activities, promotions, menu implementations according to the annual marketing plan
Ensuring that all designated action points, daily briefings or bi-monthly operational meetings are being followed by the individuals concerned Handling, under the guidance of the F&B Director, responsibilities such as hiring specific levels of employees, employee orientation, job performance appraisal, coaching to ensure appropriate staffing and productivity Ensuring training is carried out for all F&B personnel to maintain /upgrade our legendary service standards and complying to H&S standards Labour forecasting Assisting in the hotel's strategy plan, annual marketing plan, goal program and budgeting for the F&B Department Updating daily, weekly and monthly F&B report Customer comments and complaints and their corrective action after consultation with the Director of F&B and concerned department head Complying with all legislation affecting the operation, including licensing regulations, health regulations and fire and safety regulations Reporting accidents to colleagues, guests or visitors according to the Hotel procedures

As Assistant Director of Food & Beverage,, we expect from you:

Previous hotel luxury experience in a similar role Excellent knowledge of all aspects of F&B Operations, including Restaurant and Bar Management, Banqueting, In Room Dining, Culinary and Stewarding Must be highly numerate and able to work comprehensively with spreadsheets and budgeting packages Experience in developing strategic business and/or Food and Beverage plans Experience in Bench-marking activities Experience in Food and Beverage budget preparation, profit and loss statement analysis and forecasting Experience in the administration of Food and Beverage promotions Excellent forward planning and decision-making skills Experience in performance Management Experience in dealing with a multi-cultural environment and people oriented Good knowledge of Microsoft Office, including Word, Excel, PowerPoint Organised with high level of integrity and professionalism, reliable, courteous and with a good presentation Able to handle multiple tasks simultaneously, be enthusiastic and have initiative Excellent communication skills both written and verbal in German and English
